Simple Syrup

Simple syrup is just simply sugar and water.  The reason is because it is easier to dissolve when mixing cocktail rather than with ice or alcohol.  Most will say 1 part sugar dissolved in 1 part water. Professional mixologists might prefer 2 parts sugar to 1 part water or even 1.5 parts sugar to 1 part water. That is a matter of preference, as is the sugar itself.  There is white granulated sugar (the most common) but also Demerara (Sugar in the Raw) for a bit more taste of molasses, blond sugar, etc etc.

Sugar not only makes the drink sweeter, it offsets the sharp acidity of citrus juice as well.

You can also infuse your syrup with any variety of fruits or spices.  One of my favorites is cinnamon. This is good for many tiki cocktails, but also great in an Old Fashioned around the holidays or colder weather.
