Rumaki in its inception was an economical way to get rid of chicken livers. Today, it’s been elevated to bacon wrapped scallops or shrimp, even figs stuffed with blue cheese referred to as “Devils on Horseback” in some tiki places like Sunken Harbor Club in Brooklyn NY. While these could be put on a Pu Pu Platter, often they are more of a luxury item as a separate menu option.  Even if you buy them in the frozen food section, you are still paying about $1 each for them, even in the big box wholesale stores, and you can just as easily m make them at home with a little bit of patience.  The key is to use pre-cooked bacon. This way, by time the scallops or shrimp cook, the bacon is crispy, not chewy and still fatty.  In face, you might even consider using pre-cooked shrimp or figs.
