Italian Lentils

Lentils in my house were traditionally served on New Year’s Day as a sign of health and wealth, as they are in other cultures.

  • No garlic in this, although you could add it. This is an adaptation (the original recipe was twice this size and the pots only get so big)
    • Extra Virgin Olive Oil (enough to coat the bottom of the pot, about 2 ounces
    • 1 small onion
    • 1 rib celery
    • 1 medium carrot
    • 1 teaspoon salt
    • 1 teaspoon pepper
    • 1 teaspoon dried oregano
    • 2 tablespoons (2 ounces) tomato paste
    • 1/2 cup crushed tomatoes
    • 4 cups spring water
    • 1/2 pound or 1 cup brown or green lentils
    • Parmigiano Reggiano rind for flavor
    • Grated Cheese for serving
