Tartiflette
This is a very very rich French dish that should be served as a side and is very similar to Potatoes Au Gratin. The original recipe calls for it to be topped off with a soft cheese like brie in the oven, but you can easily omit that.
INGREDIENTS
- 1.5 pounds Yukon Gold potatoes
- 6 slices precooked bacon
- 1 tablespoon butter
- 1 onion chopped fine
- 1/2 teaspoon salt for onion/bacon sauce
- 2 cloves garlic
- 1 teaspoon thyme
- 1/2 cup dry white wine
- 3/4 cup heavy cream
- 1/4 ground black pepper
- 1/2 teaspoon sea salt for the potatoes once in the skillet
METHOD
- Steam potatoes till just tender (10-15 minutes) set aside
- cook onion with bacon fat and 1 tablespoon butter until gold, about 20 minutes.
- Deglaze with 1/2 cup Pinot Grigio or dry white wine.
- Add cream, salt, pepper, thyme, cook for 5 minutes
- Add potatoes into the skillet & coat thoroughly
- Put in a 400F Oven for 20 minutes.
