  • 1/2 cup dry white wine
  • 3/4 cup heavy cream
  • 1/4 ground black pepper
  • 1/2 teaspoon sea salt for the potatoes once in the skillet

METHOD

  • Steam potatoes till just tender (10-15 minutes) set aside
  • cook onion with bacon fat and 1 tablespoon butter until gold, about 20 minutes.
  • Deglaze with 1/2 cup Pinot Grigio or dry white wine.
  • Add cream, salt, pepper, thyme, cook for 5 minutes
  • Add potatoes into the skillet & coat thoroughly
  • Put in a 400F Oven for 20 minutes.
