Italian Lentils

Lentils in my house were traditionally served on New Year’s Day as a sign of health and wealth, as they are in other cultures.
- No garlic in this, although you could add it. This is an adaptation (the original recipe was twice this size and the pots only get so big)
- Extra Virgin Olive Oil (enough to coat the bottom of the pot, about 2 ounces
- 1 small onion
- 1 rib celery
- 1 medium carrot
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon dried oregano
- 2 tablespoons (2 ounces) tomato paste
- 1/2 cup crushed tomatoes
- 4 cups spring water
- 1/2 pound or 1 cup brown or green lentils
- Parmigiano Reggiano rind for flavor
- Grated Cheese for serving
