This cocktail originated in Lima, Peru circa 1903. Pisco is a brandy from Peru or Chile. The debate of who created it is as intense as asking if Poland or Russia created vodka first. Either way, a classic drink is the Pisco Sour. If you skip the egg white in this, you are not going to get the thick foam on top to hold the weight of the Angostura bitter float that acts as a garnish.
INGREDIENTS:
- 2 ounces pisco
- 3/4 ounce lemon juice (some use lime but it is better with lemon)
- 1/4 ounce simple syrup (equal parts sugar and water)
- 1 egg white
- GARNISH: Angostura Bitters float on top of foam
